At a whopping 760 calories per serving, I must say it's not exactly diet-friendly. I did make it and it was good but there has got to be a way to lighten this dish up! Maybe it was the jarred pesto sauce I used. There was a layer of olive oil floating on top of that.

Hi. I was wondering if there was something else to substitute the tomatoes? My husband is highly allergic to tomatoes. Any suggestions? Can I just leave out the tomatoes, or will that make it kinda dry?

Listen, anyone worried about the calorie/fat content should definitely not make this dish. Pesto, Alfredo, Parmesan, pasta, etc. Anyone who cooks will know immediately that this is calorie and fat laden. Having said that, I'm making it tonight! Life's too short to not eat well. Portion control, people.
