I used the salt like that on cucumber salad. The difference is soft and wet or plain mush. It does make a difference.

Made this and loved it! One tiny zucchini and squash mix, very pretty. Skipped the parboil and the salt. Rinsed, laid on towels and patted dry. Cooked with EVOO, lots of pepper, sprinkle of thyme and a pinch of sea salt. Topped it all with Romano/Parmesan mix. Then realized I hadn't cooked anything to go with it! Since I skipped lunch, I shamelessly ate every drop! Next time, I'll add carrots.

Very nice recipe. Piece of advice, make more than you need and store the rest in a reusable/disposable (oxymoron i know) like this one.

Will use way less salt next time as it was too salty even after parboiling for a minute, the ice bath, and then a second rinse.

I agree with everyone who says to skip the boiling. I make my strips with a Vegetti. By the time I have sauteed the zuch in a little olive oil/butter combo, they are perfectly done.

I like morleyo's idea, the flavourings and accompaniments sound really good. But I would change the tadpole's arse of butter to a toad's toe.

I like to try this but the ensuing salt is something adults need to stop ignoring. just slice the gourd into tiny strips and fry quickly in a very hot pan, add a tadpole's arse of unsalted butter and a clove if minced garlic,.......now, I love to add a few shakes of low sodium hot sauce ....or the juice of a warmed & rolled lemon. Scrape a bit lemon skin and sprinkle before serving, (I like to serve this with baked salmon, and roast potatoes.) It is acceptable to eat just plain, as you would buttered pasta noodles, adding a walnut of butter along with shards of parmesan cheese & lots of black pepper.

Hmmm.... I use a spiral slicer and skip the boiling step...... Salt and let sit sometimes, but right into a skillet with a little EVOO..... very tasty! Don't even miss pasta.....much.....
