Zucchini 'Noodles'

This video shows you how to make a faux-pasta dish using zucchini in place of noodles. It's completely gluten-free, and a paleo-friendly pasta to boot! You'll see how to cut the zucchini into thin, noodle-like strips. Then simply sauté the “noodles” with garlic in olive oil and top with Parmesan cheese if you like. Watch the video, then get Becka’s 5-star recipe for Zucchini 'Noodles.' Add chopped fresh herbs and summer squash to the mix if you like.

This sounds absolutely delicious and I can't wait to try it!

I used the salt like that on cucumber salad. The difference is soft and wet or plain mush. It does make a difference.

Made this and loved it! One tiny zucchini and squash mix, very pretty. Skipped the parboil and the salt. Rinsed, laid on towels and patted dry. Cooked with EVOO, lots of pepper, sprinkle of thyme and a pinch of sea salt. Topped it all with Romano/Parmesan mix. Then realized I hadn't cooked anything to go with it! Since I skipped lunch, I shamelessly ate every drop! Next time, I'll add carrots.
