Peppercorn Roast Beef

White, black, green, and red peppercorns create a festive roast beef for Christmas dinner. To begin, you’ll make a garlic paste to rub onto the roast (Chef John is using a tri-tip roast) and then simply coat it with salt and ground peppercorns. The roast “ages” overnight in the fridge. And then goes from stovetop to oven. When it comes out of the oven, tender and moist, you’ll make a quick, scrumptious pan sauce with the drippings. I'm going to make this for my 10th Worming celebration...Worming you say? What's that? Well, it's a nautical term for "marrying" two ropes together to make one rope. My partner and I get "wormed" every year and a day as a way of recommitting to eachother. This July is our 10th Worming and the first one where we're having our kids join in the celebration, so I needed a nice recipe for the occasion and Chef John is The Man in my opinion and this recipe looks amazeballs! So there you have it, a Worming Roast rather than a Christmas Roast. Who knew!?
