We call this "Hamburger Soup". Instead of using frozen veggies, I use 2 cans of Mixed Vegetables and a can of tomato paste, personally because I'm not keen on frozen and do not like whole tomatoes. Instead of adding potatoes, sometimes I use some egg noodles. Great variety.

I make a recipe similar to this only difference is I don't brown the meat before putting into pot and I use canned vegetables that I always have on hand along with canned chopped tomatoes (these are the only canned items I use in my cooking-you can buy them unsalted)I throw everything in a pot and voila in a matter of less than an hour you have vege beef soup-Great quick and wonderful on a crisp winter day. I also add fresh garlic in everything I cook.

This is very similar to a soup my Grams made, when I was a kid. There wasn't a lot of money, so she only used potatoes, carrots, and onion, and no stock. She crushed whole tomatoes herself, (3 28 oz cans) to make it look more rustic. I still make it about twice a year, as it's one of my favorite childhood comfort foods.Great way to get veggies into the kiddies. Cant wait to try this version, after finishing off Thanks giving leftovers!
