Video: Chef John's Egg, Potato, and Pepper Pie

A big egg, sausage, pepper, and potato omelet topped with Cheddar and broiled.

It’s never too late in the day for a delicious breakfast pie with eggs, sausage, and potatoes. In this video, you’ll see how to make a simple frittata, or egg pie, starring scrambled eggs, sausage, fried potatoes, poblano and roasted red peppers, all topped with melty Cheddar cheese. It’s basically a big broiled omelet full of deliciousness. One thing this video does not have is a voiceover by Chef John; it does, however, feature a jazzy music score, which is always nice, whether you’re fixing this hearty omelet-slash-frittata-slash-eggy pie for breakfast, lunch, or dinner. Very delish, we must have onions and garlic, or my clan will not eat it! This is something my 96 year old Mom use to make. It's a build as you like meal! Yummy

Love Love the music!! Not sure anyone needs a specific recipe, just start with the basic potato and add whatever veggies you have in the refrig and herbs and top with the beaten eggs and viola.

Recipe looks great, but unless you want to write down everything that goes into it you're out of luck. Where's the recipe? Also, let's get rid of that blah-blah music and hear Chef John's melodious voice instead!

I also miss Chef John's commentary......along with the recipe. I can't seem to locate the recipe. The option for the recipe wasn't attached to the video as usual and a search turned up a different recipe. Help please, as I really would love to try this recipe.

Do we really want to skip onions? olives? an anchovy, for depth? Maybe the intent is to isolate the individual, simple flavors without additional complexities -- Chef John's comments probably would have explained, enjoyably as ever.

Looks amazing, but I miss Chef John's commentary - will probably try to make this, but I hope this isn't a hint that he won't be speaking again.
