what if you use bread flour any difference in cooking times? too chewy?

Is instant dry yeast the same?

Salt just slows down the yeast action but doesn't kill it. Great recipe but the ratio of flour/water are significantly different from the other french bread recipe on here. One of them must be incorrect.
