Wow! Thank you for featuring my recipe! :) I check on the reviews occasionally and it was a nice surprise to find it here. I'm slightly baffled when folks comment on how they had to add liquid or oil or sear the outside of the roast to make it come out moist. Cooking to the proper internal temperature and letting it "rest" after baking will yield a moist roast no matter what is done to the outside. I rinse the roast and pat it dry with paper towels. This makes it tacky enough for the seasonings to stick without oil. Then I bake it on a rack in a small foil lined broiler pan and the outside is always browned and the fat layer is crisp. I admit I've never had any drippings to speak of and have never made gravy but, thankfully, my family doesn't mind. I experimented for about three years with ingredient proportions before arriving at the current recipe -- not too salty, not too bland -- but I'm very happy to hear of cooks who adjust it to their own taste. Helen, my mom has kidney failure and has to follow a renal diet, too. This recipe doesn't seem to have much salt in it, but you could cut the garlic salt in half, or replace it entirely with garlic powder. With the rosemary, garlic and pepper it should still be very flavorful. DO NOT use salt substitutes; they are high in potassium which is a no-no for kidneys. You can find lots of good recipes if you do a search for "kidney diet recipes" or go to the kidney foundation website, or others like it. Good luck!

I love to cook pork and sauer kraut together. They compliment each other. Pour the juice from the raut over the roast or chops. Cook at 350F degrees for a hour. Try it. You will like it.

I make pork loin and tenderloin roasts all the time. They are very easy and versatile to cook. I often tuck mine in with sweet potatoes, butternut squash, and onions. The sweet flavors from those veggies compliment the pork nicely.
