Chef John is using sheep’s milk yogurt here, but you can use regular cow’s milk yogurt, too. After a few days in the refrigerator, it comes out firmed and tightened up and looks and feels like cream cheese—and tastes even better, more flavorful, more tangy than commercial cream cheeses.
