This was SO delicious. The skin was too salty, but the chicken was super juicy and tender. For the sauce I used basil and garlic instead and made a yummy pesto sauce.

I place the chicken in the middle of the roasting pan and pour the kosher salt all around like a picture frame , it doesn't touch the chicken. Comes out really good.

Oh seriously, chop off the tail? That's my favorite part! My Mom always called it the "Pope's nose" though I have no idea why. In my family I cook the neck, giblets etc. to the side, and indulge all by my lonesome. Someday they'll catch on and I'll have to fight for them.

This recipe looks wonderful, but I cook with pastured chicken and wonder if the oven temperature might be to high.

I've made salt roasted chicken for decades and used a good quality season salt, also, I use cut up chicken fryers, not a whole bird. Yes, for sure clean the pin feathers! Place the pieces in a sprayed or greased glass baking dish, sprinkle liberally with the seasoned salt and bake for about an hour in 350 degree oven until juices run clear. I leave mine n a little longer as we all enjoy the crispy skin. As far as making sauce or gravy from the drippings - naw! Too salty for that,

Re: Salt Roasted Chicken recipe. CLEAN the chicken first! Also, don't cut off the tail. It's actually very good-tasting. The "gland" (tallow-bump) to which he referred is removed before the chicken is sold. Otherwise, I like the recipe.

An improvement that we have been using for years; pour the kosher salt around an aluminum roasting pan. Sprinkle rotisserie chicken spice liberally onto the chicken (both sides). Roast in the oven for 1 hour at 400F then turn it and roast for another 1/2 hour.
