I make mine similarly, however, I do not use tortillas...they get too tough. I use a layer of roughly crushed (not too broken up)Doritos (I prefer the Nacho Cheese flavor). There is no need to put sauce on the bottom of the pan. Other than that it about the same, I just don't add the extra spices as the Rotel tomatoe & Chile is just perfect for me.

We usually leave the tortillas whole and use thinner corn tortillas. We also use canned Rotel (tomatoes and chilies), but you can make your own. Also put cheese on every layer. And please use a bigger pan. It is a Texas dish afterall!!

You need to correct the origin  of this recipe. The King Ranch, located in South Texas between Corpus Christi and Brownsville, is one of the largest ranches in the world.  Founded in 1853 by Captain Richard King and includes portions of six counties.  The recipe has been handed down for generations in the numerous towns and communities that dot the 1,289 sq. miles of the ranch were the cowhands and their families continue to live today.

Here is the recipe. Meat from one cooked chicken 1 onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 1 T. vegetable oil 8 oz. cheddar cheese, grated 1 can cream of mushroom soup 1 can cream of chicken soup 1 c. chicken broth 1 can diced tomatoes with green chilies 2 T. sour cream 2 t. cumin 1 t. ancho chili powder 1/2 t. oregano, dried 1/4 t. chipotle powder 1 t. salt (or to taste) Made this last week and took to a party and it was pretty much gone in no time. Going to try it with turkey, since I have leftovers from thanksgiving. Thank you Chef John for all your great recipes.
