Chef John's Smothered Pork Chops

In this video, you’ll see how to make easy pork chops smothered in an amazing onion gravy. To prepare this Southern classic, you’ll simply brown the chops and onions, and then add garlic and flour to the pan. A little broth will deglaze the bottom, creating a deeply delicious sauce. The key, though, is to make sure the onions are very well browned, so the gravy turns out dark and richly flavored. Watch the video, then get Chef John’s recipe for Smothered Pork Chops. Oh boy, this is so simple and saucy.

I tried this recipe tonight. My hub is allergic to corn & milk so I substituted the chicken broth with Thai fish sauce, about 1 - 2 tbs with the same amount of liquid & Hellman's mayo instead of the buttermilk. It was great but the next x I won't do salt with the first few steps as the fish sauce is very salty. Thanks for sharing
