Authentic cooking is what you were raised with and what hits the heart and mind, so don't listen to all those book cooks.

Hmm, you people are incorrect. Many "authentic" Mexican dishes DO in fact contain Cheddar Cheese. Mexico is a Huge country with many different in-cultures, so saying something isn't "Mexican" is a huge blanket statement. Chihuahua cheese is cheddar with a cute name. There are many different types of "authentic" anything in a country as large and as diverse as Mexico. Bacon is quite common in Mexican cooking, don't know why one would claim differently. Butter is too, introduced by the Mennonites, it is now very common in Mexican cooking. In central Mexico, one would be hard pressed to find FRIED eggs, as they are usually poached.

Huevos Rancheros without fried eggs? Really? And yes, they do include cheese, corn tortillas, and salsa. Sometimes refried beans and/or avocado. That's how my Mexican in-laws all made them! But no bacon!

You will never find butter in beans in Mexico, we use pork lard. You will never find cheese, bacon, olives or chives either. And Salsa Ranchera is made with tomatoes. And yes dixiedog44 huevos rancheros are made with fried eggs.

I agree with you that this is nowhere near authentic. But, having been mentored by some excellent hispanic cooks, I was taught to cook AUTHENTIC huevos rancheros and they always included eggs. Huevos is spanish for.... eggs.

I ate huevos rancheros many times as a young man and not once were fried eggs or cheese involved. Authentic?
