I live in hot & humid climate and don't have a cool dark place to let this ferment. Can I ferment this in the fridge? Also, how long will this sauce keep? I presume it must be refrigerated?

I made this exactly as posted, is wonderful In texture and flavor.. The fermentation formed a white scum, removed it and continued.. it took about 45 minutes to render-down to a firm consistency...

Is it OK to let it ferment longer? just wondering if that adds more flavor or?? What exactly is the reason for the fermentation?

I was wondering if you could use the splenda brown sugar blend in place of regular brown sugar...will it still ferment...

Chef John, Great video for making this wonderful sauce. I've been fermenting for awhile now and have learned that when you boil your ferment much of the good bacteria is killed. Is there a way to make this sauce without the heat?
