I followed the directions exactly and when I tried to peel my eggs the were liquid mush. What a waste of eggs!

The "cool the eggs with really cold [faucet] water" does not work in many southern parts of the U.S. -- especially in the summer. It's extra work for sure, but while the eggs are boiling, I make two water baths w ice in large bowls.

They were not cooked at all. I turn to Allrecipes whenever I have a cooking question.

I always bring my eggs to a boil, cover, turn off the heat and let set for 10 minutes (extra large eggs). I drain and cool under running cold tap water and they are perfect every time with a beautiful light yellow and creamy yolk. I have never had a bad boiled egg since unless I eat someone else's boiled eggs which are boiled until the yolk is green and hard. Those are awful.

I followed the chef's exact instructions and every egg peeled perfect! I made 80 deviled eggs for a birthday party this weekend! Thanks Chef John! :)

Wow, just wasted a carton eggs for Easter. I did everything as stated. Is gas stove the prob? I only looked for a recipe because i wanted the eggs to peel nicer than usual. I timed and cooled them meticulously. The whites fell apart like mush in my hands when I tried to peel them. Guess it's back to the drawing board for me.

I would think it would make a difference if you have gas vs electric stove. Electric stove stays warm after turning off, gas doesn't. I have gas, so will probably simmer, turn off, cover as described...then after 5 min bring to a simmer/boil again, turn off, cover and let it sit until the 17 min is up.
