In this video, you’ll see how Chef John makes stick-to-the-ribs country gravy. It’s a milk gravy starring breakfast sausage and bacon. You’ll also see how to make a simple roux. Could there be a more flavorful gravy? The answer is no. And it’s so incredibly simple to make, too. Watch the video, then get the recipe for Chef John's Country Gravy. Serve it over biscuits, of course, or country fried steak, or fried chicken. And top it with chopped green onions and maybe a sprinkle of cayenne. See more Chef John videos >>

Some of us in the South make Tomato Gravy and eat it with of all strange things: Cantaloupe and biscuits. Make it using the bacon drippings and then mix in the roux and pour in a can of crushed tomatoes.

This is really good on top of country fried cube steak, and open biscuits....I even love it with chopped mushrooms too.

I love sausage gravy and it has been a tradition in my family for God knows how many generations. I have never tried onions or even bacon in my gravy and instead of removing the casing of the sausages, I just cut up a couple of them to float around in the gravy and serve the rest of them on the side. We just had it this morning and my Persian/Italian husband loves it. The twist is, my grandmother served this sausage gravy over pancakes! Most people turn up their nose when I tell them I serve fluffy pancakes smothered in sausage gravy but I have yet to find anyone who doesn't experience love at first bite. Healthy? No! Delicious? Yup!

I must try this with onions!! Mom use to make hamburger gravy; feeding 5 kids we needed to stretch the food to feed all 7 of us. I do make it occasionally, but take some of the fat out before adding the flour. I just used some of the fat from the meat, then removed all but about 1- 2 tbs. yummy,,

BAD INFLUENCE. Way too tempting. I grew up on this kind of stuff. Very unhealthy. Very yummy. I'm marking this recipe to my box. Wish I hadn't looked.

Oh how I love the sausage in this gravy. By the way everyone has their own way of making this so I could not care less how they fix it in the southeast, but I do love how we make it here in the southwest, and it's just like this!

I've made this gravy countless times, and it always turns out delicious!!! My favorite version is with bacon and Jimmy Dean sage flavor sausage (1 lb. in a tube)
