Re: bacteria. Fish sauce and soy sauce are so full of NaCl that bacteria have a very hard time living in it. That's why we salt things for preservation. That's why we don't have to refrigerate all these sauces.

We didn't use the marinade to brush over as the chicken grilled. We used the sauce instead. We did everything else according to directions and it was delicious hot, or cold.

Worried about putting the leftover marinade on the chicken---- Brush the marinade on your hand and place it on the grill, then tell me how many seconds until you think the bacteria is dead.

Tried a lot of recipes from this site. This was the first one that I thought was absolutely awful. I guess I just don't like 5 spice powder. Or else I was using politically incorrect chicken.

O.K. If you're cooking the chicken with the marinade on it, and you then brush the SAME marinade on it, the chicken doesn't care if the marinade came from the bag or the brush. If you use common sense, cooking is fun, it doesn't have to rocket science. As long as the marinade isn't put on after cooking, it's fine. 45,000 people will not be harmed in the making of this dish ;-)

You cook the chicken for another 45 minutes after brushing it with the marinade, so you are protected against bacteria/salmonella The recipe is fine as written!
