Perhaps the word you are referring to is calcagno, Italian for "Heel" or technically the end of the foot...?? :D

the end of the bread was called the nose by my Great grandparent who were from the 1890's. My dad called it the nose till the day he died in 1996. I make my sauce the way grandma made hers cook a long time.

Room temp is 65 degrees? LOL! I live in FL, room temp never hits lower than 75. Should I let it rise fewer than 18 hours?

Can you make this by using only whole wheat flour?

Yolusia, please find the recipe All purpose flour 4 cups 1/4 yeast 11/2 teaspoon of salt 2 cups of warm water Mix all together and let it stand or 18 hours. Punch down with spatula and fold a few times. Slightly oil heavy half sheet pan and generously sprinkle corn meal generously. Spray water on the work surface and place plastic wrap ( it will nt move) sprinkle flour and scrape the dough on there, sprinkle some more dough. Somehow by pulling stretching make a long ciabatta shape. Place in the cooking sheet and let it rise for two hours. Preheat oven 450 degrees. Bake for 35 minutes
