I like this recipe - except for the crazy amount of sugar glazed on top. I don't need nearly that amount to achieve a crackling on top. I want a soft thin crack, not a layer of brittle!

I really like this Chef..however, I am really picky about the texture of my Brulee.I would have liked to see the texture after he torched it! (just to see if its creamy/saucy (instead of custardy which I do not care for)! I am going to try it though! Thank You for the video!

Go to the Hardware Store and buy a blow tourch. About 11 bucks and comes with the nozzel! plus you can use it around the house, you know in case you like to sweat the occasional pipe, and cook!

I love the flamed sugar on lots of things but I don't have a torch yet but I did have one of those lighters that have a bendable extension. It takes a little longer but you can flame the sugar with one of those in a pinch. I do get closer with the flame and you have to relight it several time but it can be done. I was watching the video without my glasses so didn't see a problem. Not something you really need to see that clearly is it?

He mentioned "brule-ing" the top under the broiler if people don't have a torch, but he didn't show how to do anything except torch it. I don't want to invest in a torch and one more gadget in the cupboard that would be used so rarely. They need to include directions for how to make this under the broiler instead.
