Here in Northern Maine there is a delicacy called Black Diamond Steak. I've tried to duplicate it for 30 yrs to no avail. It's skirt steak and it is black-before it's cooked. Has anyone got the secret?

JImbo are you from Skirt steak is a cut from the "plate". It is long, flat, cut known for its flavor rather than tenderness. Flank steak is similar butt cut nearer the rear quarter.

Unbelievably delicious! I make this about 4-5 times during the summer, occasionally mixing up the spices, but this is my favorite. Funny how the easiest things taste best. Thanks Chef John for the video. We love it.

For anybody living in the SF Bay Area this is a deconstructed recipe for "Fred Steak" sold at Schaubs Market in Palo Alto. Most variations include coffee, cola or Dr. Pepper, molasses, garlic, rosemary, Tamari Soy Sauce and spices. The trick is to get a dark brown almost black coating on the outside of the meat. Considering Schaubs charges over $21/lb. for Fred Steak (using Tri Tip) this is a great alternative especially when using Skirt/Flank.

Recipe amounts can be found on But-here they are 1 1/4 lb skirt steak salt & cayenne pepper to taste for marinade- 2-3 cloves minced garlic 2 tbsp ketchup 1 1/2 tsp black pepper 1 tsp salt 1 tsp dried rosemary 1/4 tsp hot sauce 1/4 cup rice vinegar 1/2 cup strong coffee 12 ounces cola Follow video directions-and enjoy... I did!
