This guy does great for his first time but if you are new to macarons you have to let them rest in a cool area after you pipe them for 15-30min, that is why his macarons cracker and had very little feet. Everything else about this recipe is correct. Macarons have to rest until the form a skin on the tops of the shells, this means that if you leave them to "rest" for 15-30min that if you touch the tops of the macarons they wont stick to your hand. If your macarons stick to your finger after 30min of resting you might as well toss them out because that means they did not come out.

And to those of you complaining that he doesn't tell what ingredients we need, yes he does, he just doesn't tell us from the start. We're told of what we need to as he's going through the steps. The standard in most macaron recipes regardless is powdered sugar, almond meal, salt, egg whites, and sugar. The cocoa is not standard. However, measurements can vary recipe to recipe and we're missing that information.

I bet if you sprinkle some coconut on the filling allowing some to stick out beyond the "bun" it would make it look like a "cheese burger"(like melted cheese mmmmmmmm). I love coconut so I bet it would taste good too

chef omited the step in productions of French macaroons. Before baking you need to let the macaroons stay in room temperature until skin is formed, ony then they could be baked to avoid the cracking.

100 gram powdered sugar 50 grams almond meal aka almond flour (the finer the better) 25 grams unsweetened cocoa powder 2 large room temperature egg whites 65 grams granulated sugar For chocolate ganache: 1/3 cup hot heavy cream 4 ounces dark chocolate, chopped pinch of salt
