In the same way you put the herbs and spices under the skin for flavor, you can add butter under there, too. It will sorta self-baste for awhile, and the white parts will be so juicy! I have done my Thanksgiving turkeys this way for years, and they are always so moist. I still have to baste them, but turning them breast-side down to cook reduces the basting time as well.

This is my go-to recipe! I put the chicken in a larger pan and filled the pan with vegetables: potatoes, carrots, celery, onions, and especially, a lot of bell peppers! Add more lemon/oil and baste to get the wonderful juices. It is a winner!

I made this chicken recipe today for sunday dinner it was so good. My family loved it however I mixed my lemon juice and seasonings all together along with my olive oil because the way the recipe goes all the seasonings are washed away. This way the chicken was great!

The spice mixture lemon & oil is a good blend of flavors. To infuse the flavor into the chicken, I ground the spices in an old coffee grinder I keep for grinding/ blending spices. I then mixed them with the oil & lemon and used an injector to inject into the meat and under the skin. I also rubbed the skin with the mixture and paprika. Paprika gives a nice color to the skin. Chicken was oozing with flavor and moist.

Place the rub under the skin the pour liquid over chicken the sprinkle some more rub

I dont know how you would put liquid under skin. How about suspending spices in butter and then rubbing under skin?

Put the rub and the liquid under the skin and it will flavor the meat. On top of the skin flavors only the skin. I may try smoking this also. Low and slow at about 200-225 for about three hours. I always use a thermometer for proper cooking.
