The key to crispy latkes? Getting as much moisture out of the veggies as you can. See a couple of different ways to do it in this video for zucchini, carrot, potato and feta cheese latkes. The feta cheese, added just before cooking, makes these latkes the perfect combination of creamy and crunchy. Latkes (a.k.a. “potato pancakes”) are traditional during Hanukkah, but if you like a quick crispy snack, you’ll want to have these year-round. Yes, this is a great recipe. It is the recipe for what we Greeks call Kolokithiakeftethes. Yes, it is a mouthful but this dish is VERY old and has been enjoyed by Greeks since ancient times." Kolokithia " means squash, including zucchini and "Ketfethethes" indicates the means of pan cooking a ground medium like meat, pumpkin or any vegetable.
