I love the video, I love making my own bread too. I even mill my own flours and next year I'm hoping grow my own wheats. I just planted a few of my favorite wheat grains. Milling your own flour really makes the bread taste unbelievably better. Although, homemade bread of any flour is fabulous! I still love my white breads, which you can't produce your own.

I've been making our family's Thanksgiving dinner rolls from scratch for the past 5 years, and just now, thanks to this website, I learned I was scalding my milk WRONG and that my kneeding, while semi-correct was WAY to short in time! Thank you ALLRECIPES!!

In culinary schoold, you are taught that kneading dough is perhaps the most important and least understood step in the bread baking process. Its not just about "mixing" the ingredients. The most important result of kneading is the proper development of gluten. This video conveys that importance and will perhaps result in just a little more kneading time and better results for bakers willing to give their dough that extra bit of love.

I think I tend to not knead the dough enough! I usually only knead for 5 minutes! I'll have to try it for 10 minutes next time, as suggested in this video!

i would have liked to have seen an example of when the dough has reached the "elastic and silky" stage after kneading...i have a feeling i've been under-kneading my dough, but i have no clue what it should lookor feel like!
