Let Chef John be your creative inspiration. In this video, Chef John cooks without a net, using leftover spinach and artichoke dip to make a stuffed pasta dish. He takes his tasty dip and combines it with some ricotta cheese and crushed red pepper flakes. To brighten flavors, he adds some fresh lemon juice; and to tighten things up a little, stirs in a gently beaten egg. And there’s your filling! A simple béchamel sauce and Parmesan cheese top the stuffed shells. Then it’s just a quick bake in the oven. Serve this as a side dish with some Italian sausage. Chef John....You Rock! I could just sit and listen to you as you cook all night! Can you come to my house and cook for me? (just kidding!) I love cooking with leftovers. Chef John is right - it doesn't matter how it turns out have fun and experiment. If you had a few leftover cocktail shrimps I bet they'd be great chopped up and added in.

That is a very neat idea. Stuffed Artichokes into shells. Who doesn't have leftovers from that recipe when they have a function. Would not have thought of that on my own.
