I have been making fig preserves now for quite some time and I use about 1/3 cups of sugar to the same amount of figs, ten cups of figs, no more than three cups of sugar. I also add one lemon to that batch and one table spoon of cinnamon. I have never had a complaint about not having sweet enough fig preserves, in fact, I get just the opposite. This idea on how much sugar is just my own personal opinion but I got this recipe from my mom who has been making fig preserves longer than most people have even been alive...she is now 92 and still making them.
