Keeping this dish natural and flavorful reminds me of James Beard's statement he made after revamping the way he cooked. (Actually, because of health reasons, he was forced to rethink the way he ate and cooked.) James Beard said when eating a baked potato - without anything on it for the first time - how delicious and flavorful a plain baked potato tastes! I will make your dish later this week...I am sure it is delicious! Thanks for the reminder...

Looks delicious, but I would have used chicken stock and a touch of white wine to deglaze the pan instead of just water.

we do this with venison often (actually did it last night) however, if I was making the chicken, I too would have wanted to used something other than water :)
