Thank you chef for not calling that Thai Green Chicken Curry because it is not. But yours looks yummy too.

I have had this in my recipe box since last year wanting to make it. I'm going to give it a try for sure! For those that don't wan the bitter taste of the lime, try using kaffir lime leaves. These are used in Thai cooking frequently, similar to how Americans use bay leaves. Also, Thai basil is delicious if you can find it (Ranch 99 has it), it is a little sweeter than USA basil.

This was incredibly good! And that's from someone who does not normally like curry. I removed the skin before browning my chicken to get rid of a bunch of fat. I also used a lot less ginger and cilantro than Chef John does because I don't like those flavors. I also just squeezed the lime juice into the sauce but did not add the full rind since I did not have any key limes and thought it would be too bitter (my end sauce was not bitter at all). Finally, I only added about half a can of water and it was still too runny in the end for my taste. Next time I think I'll just run a tiny bit of water in the can just to get the remaining coconut milk out, but no more. I'm not a huge Thai connoisseur - this was actually my first attempt - and I was a bit skeptical because I've actively hated curries I've had in the past. The end result? I thought it was really good - good enough to leave a review, from someone who doesn't normally review! I thought it was too good to let the negative comment

I made this just watching the video, and I basically ruined it by leaving the little limes in it when i was was so bitter...all i could taste was bitter lime..also when i cooked the veggies i should have added the eggplant about when the yams were half done...i will make this again minus the lime...also i didn't have basil..I don't know maybe I messed up and wasn't supposed to leave them for so long?
