In this video, you’ll see how to make a super-simple chilled pea soup with leeks and sugar snap peas. It’s light, refreshing, and delicious. Snap peas simmer with leeks, mint leaves, and seasonings in chicken broth (or vegetable broth, for a completely vegetarian soup). You’ll puree the soup in a blender and then strain it to get a super-smooth texture. Before correcting the seasonings, refrigerate the soup, chilling it to serving temperature.
