@mo.ashori: Instead of egg, you can use chia seed. One tablespoon of chia seeds to three tablespoons of water. Let them soak and expand. They call this a chia egg.

Great recipe! Very delicious! May I suggest---If you are looking to make this recipe WITHOUT the bread crumbs and the egg, simply use cooked mashed sweet potato...This addition takes the burger from vegetarian to vegan, and amps the flavor and the texture. They are a touch crumbly at first, so don't turn them until they are cooked fully on one side.

I agree with not using bread crumbs or eggs. As a great alternative to meat, black bean quinoa burgers are perfect, and best left vegan. Increasing the quinoa or using almond meal are two ideas to replace the bread crumbs. Adding tofu or chia seeds would replace the function of the eggs. Good start to a needed recipe for people needing or wanting healthy alternatives to meat.

I love making kidney bean & quinoa burgers - super healthy! I'm just not sure why there's a need for breadcrumbs and eggs in this black bean version, however. Seems like needless processed food and cholesterol - kinda defeats the goodness in the beans and quinoa, no? Perhaps someone can shed some light, please? To Mo.Ashori - I use 1 cup COOLED cooked quinoa to two cups COOLED cooked beans, saute finely chopped carrots, onions, celery, and garlic' add some spices and pulse the whole thing in a food processor, form into patties and "fry" in a tiny amount of healthy oil. Crackers and egg definitely not needed.

@mo.ashori: I left out the bread crumbs and doubled the quinoa. I also left out the cumin. It is fantastic with dark red, no salt added kidney beans. If grilling on gas grill, oil the preheated grill with a paper towel. Fantastic! I also have made recipe and rolled into "meatballs" for home made tomato sauce and parmesan cheese if desired. Even loved by meat only husband!!

could we use something else instead of egg to make it a vegan version of the same recipe? Otherwise, great recipe.
