I add a pinch, tiny pinch, psyllium husk, or just use vegetarian egg mix not eggs Yes, in Ireland but veggie and not horrified, whatever works is fine To avoid eggs, meat and fish and have good food is my goal Traditions, like language are remade all the time and the purists seem to not realise there are many vegetarians here! Time to change I think.......

This really sounds good but I am looking for a vegan version and I think the egg is really needed to hold it together-would welcome suggestions for substitutes.

Meatballs to bolognese: I prepared the recipe as advised by chef John, but I only had one egg and rolled oats handy. They came out beautifully and stored very well in a tub in the fridge over night. When it came to heating the balls up in the sauce however, they fell apart. I guess you need the 'quick oats' when the mixture is still warm and the second egg keeps it all together for a longer soak in the sauce. Although we did not get to eat spaghetti and meatballs, we did eat a very nice vegetarian bolognese instead! So take heart, if something doesn't work out, the bolognese sauce this will turn into, tastes absolutely lovely and the texture is very good too! :))
