Use a whisk to stir the gravy.

I have found that a whisk helps make lump free gravy. Every cook should have a couple different sizes.

Discard the Giblets? I always chop them up and add them back to the broth.(some people don't like the liver, but you'll never know it was there.) Your continued use of flour as a thickener is so old fasioned and lumpy. The best way to great gravey is to add equal parts bulk food mushroom soup mix and cornstarch directly to the pan drippings, (start with about 2Tbls of each.) after you have removed the turkey, skimmed the excess fat and allowed the drippings to cool slightly. Do not heat until you have combined, first the cornstarch, mushroom soup mix with the drippings.( You will end up with a paste.) Then pour in your chopped giblets and broth. Stir this all together scraping all the brown bits in the pan and slowly apply some heat. Keep stirring and scraping until things start to thicken, then add your saved potato/turnip/carrot, etc. boiling water to attain the proper consistency.....................perfect gravy every time!
