I always process it for 10 minutes in a water bath. BUT, I FOUND THIS RECIPE/VIDEO CONFUSING. In the video it say ONE packet of liquid pectin. In the recipe it says 2 (3oz). I have never seen a packet of liquid pectin come in ONE 6 OUNCE PACKAGE. Only TWO 3oz. packages. So, ppl watching the video might use 1 and have it not set or perhaps it's suppose to be ONE??? LOL Anyway, I made it last year and ppl raved so, I'm attempted it again this year but, I found the recipe now having a year of canning experience....confusing. My advice....follow the directions inside the pectin but, follow the other ingredients from the Allrecipes one. AND WRITE DOWN WHAT YOU DID SO YOU CAN REPRODUCE IT IF IT WORKS.

I should think this would be fine on the shelf if everything was well sterilized. The ingredients are all items that you ordinarily don't refrigerate except for the peppers. Sugar and vinegar are themselves preservatives, like salt.

after prcessing if the jars are sterilized, isnt it safe to keep on shelf until use? I've made this last year and it was good with just jalepenos

This video for pepper jelly isn't safe if t isn't processed. You need to tell people to keep it in the refrigerator, freeze it, or process it ten minutes in a water bath.
