I also make a very simular breakfarst casserole in my big round electric skillet, usually always on Christmas morning. I think tomorrows Easter morning it will be on our brunch menu! Yeah! Thanx for the reminder. Happy Easter Everyone!?

I have been making a similar dish for many years but use Potatoes O'Brien instead which already has the onions & peppers in it. I also layer it in an electric skillet, butter, potatoes O'Brien, eggs without the milk, bacon and grated cheese on top. Cooks in about 45 minutes..one pan and less mess. Serve it out of the skillet. A real family favorite. Also can use real bacon bits if in a rush or pre cooked bacon from Costco.
