Green centers in garlic make the dish very bitter. I learned that when making humus. Ruined it. I always remove them now and on onion too.

This recipe is delicious! I have tried to substitute hamburger and it just does not taste as good. That spicy Italian sausage is what gives it that delicious flavor.

I accidentally threw the recipe away after I made this, & I've been looking for it, ever since. It is delicious. Can't wait to make it again!

Hi Claireris- No, you'll be fine. As long as there is no dark, or squishy patches visible on the onion itself, it's ok to use. Those patches can contain mold which can make you ill, but green cener is fine. :)

I did it! and it was excellent! I added 2 tsp of dried basil because we like basil, and approx 1/2 cup dry red wine. Wow! I even impressed myself. Thx for the recipe.

Question please!!! Notice how when the "chef" is chopping that white onion, it's all green in the center! Is that still considered safe to cook/eat? I was told to at least throw the green shoot away because it's bad, in onion and garlic. ?
