This was a big hit for supper tonight. Used chili powder with cayenne instead of the red thai, used 1 large sweet potato chopped and frozen peas as the veg add in. Delicious!! Thanks Chef John, you're my go-to guy on allrecipes.

Think I'm going to try this, but substitute large cubes of sweet potato and Japanese eggplant (or broccoli) for the small potatoes and bok choy. I will also more than double the amount of red curry paste, since I like it spicy!
