Butternut Squash Cakes

In this video, you’ll learn how to make gluten-free butternut squash cakes. Chef John will show you how to safely peel a slippery butternut squash and then cut it into chunks before grating in a food processor. You’ll get a tip for preserving any leftover grated squash. The key to this gluten-free recipe is to replace the wheat flour with corn flour and garbanzo and fava flour. Then you’ll see how to fry the cakes in just a little bit of oil. Serve these squash cakes like you would potato cakes, with a dollop of sour cream or yogurt. Get Chef John’s recipe for Butternut Squash Cakes. Easy, healthy, and delicious, these butternut squash cakes are a terrific, satisfying side for autumn and winter.

"By the way, if you're POOR and don't have one of these, you can grate it by hand." REALLY?

  • AnnMarieB

Yeah, us POOR people use graters like our grandmothers did, tastes the same. Recipe was great, however, I left out the cumin and curry, don't like them and used real flour, came out great. This squash recipe is a real keeper!
