I would still rinse the beans and use a little water. Otherwise, sounds great

I have been making this soup for 24 years and use chicken broth for base since my husband is allergic to beef. Delicious!

If you can find a bag of Italian vegetables in the freezer section, defrost a little so you can cut up the bigger pieces. That saves a lot of veggie cutting, and those veggies work well in this. I've made this soup for years too, but love the idea of French onion soup mix for the broth!

I have been making this soup for 20 years. Only difference is to add French Onion soup instead of plain beef broth. You will not believe the flavor! I have not used spinach as original recipe calls for chopped cabbage. Really good.
