This is a great all-purpose stuffing or dressing, perfect for Thanksgiving dinner but also terrific with pork chops, prime rib, and roast chicken. In this video, you’ll see how to make baked pecan apricot stuffing. Find out why sourdough is a great bread choice for making stuffing and why tearing the bread actually works better than slicing it into neat, uniform pieces. You’ll see all the ingredients that go into this delicious stuffing, including diced dried apricots and pecans, and you’ll learn why keeping the dressing lightly packed in a casserole dish makes for a better end result. Get Chef John’s recipe for Pecan and Apricot Stuffing. Whether you serve it as stuffing (roasted inside the turkey) or dressing (baked in a casserole dish), you’ll love the crunchy, sweet, and a little bit sour side dish. See more Thanksgiving videos >>

I bought a "Costco" size Herbs de Provence at Restaurant Depot. You must have a business license to shop there, unfortunately. Otherwise I would bet Trader Joes would have some.

Herbes de provence is not anything like an Italian herb mix. It usually contains savory, fennel, basil, and thyme. Typically real French herbes de provence does NOT contain lavender.

Tearing the bread into pieces has to make it look more homemade/rustic. Chopped apricots and pecans should be great additions to change up an ordinary stuffing side dish.
