Herbes de provence is not anything like an Italian herb mix. It usually contains savory, fennel, basil, and thyme. Typically real French herbes de provence does NOT contain lavender.

Tearing the bread into pieces has to make it look more homemade/rustic. Chopped apricots and pecans should be great additions to change up an ordinary stuffing side dish.
