I'm going to try these with sweet potatoes instead, as my husband doesn't like squash (??????). I think it should work as they basically taste the same to me.

I was on vacation last week and went to an Italian restaurant. Had this as an appetizer. YUMMM. This restaurant crisped whole sage leaves and oh, my they were the BEST. Love this recipe and will be trying it soon.

We add grated Amaretti cookies(Italian almond cookies) on the top of the dish - delicious! Adds just a hint of sweetness.
