Yes the 'X' or cross was made to keep the evil spirits away, as well as help the bread rise correctly. It's an old Irish tradition. I've never put sugar or butter in my soda bread mix.

Isn't the "X" you cut into the top of the dough called a Cross? I'm guessing Irish folks would be pretty amused by calling it an "X."

My first time making Irish soda bread and won't look any further. This recipe was great. Thanks for the added video so we can see the texture when done kneading.

I have never seen or used butter or sugar in soda bread, my grandmother showed me how to bake and she died 65 years ago. just soda salt & butter milk that was it and it was good. I will try those recipes.
