I'm 60. Been cooking with my Italian family, since I was a preschooler: mom, grandmother, and aunts. I was taught to cook & bake adventurously, creatively and with love & passion. I enjoy Chef John's excellent recipes and videos. Ladies & gentlemen, enjoy your time in the kitchen!

I don't always want to see a video. The recipe alone doesn't show up I used to use beef broth... But now use Vegetable stock, organic, low anyone can choose to eat it...vegetarian to carnivore.

I make French Onion Soup every Thanksgiving (35 yrs now). Guests prefer the soup over the Turkey! I also chop (onions fit better on the spoon) and I do mine overnight in the crockpot using just chicken stock. Gets as dark as a beef and not as salty. I also prefer the beef/chicken stock over just beef. I use cognanc, but flavor is similar. That sherry/cognanc is the ingredient that REALLY makes the soup. Don't ruin the soup by using a garlic crouton...just use a plain crouton. Love Chef John!
