In this video, you’ll see how to make little baked omelets, frittatas, quiches, eggy breakfast muffins—whatever you want to call them. They’re made with eggs, chorizo sausage, diced potato, and manchego cheese. If you can’t find chorizo, try pepperoni! And in a pinch, aged Cheddar or Asiago can substitute for the manchego cheese. You’ll see how to assemble all the ingredients in mini muffin tins. Top these with a nice garlicky aioli, a sprinkle of smoked paprika, and diced chives.
