Chef John is great. I always check his recipes first. Making great food isn't about using the MOST ingredients, it's about using the RIGHT ingredients. Chef John knows this and I love every recipe of his I have ever used.

My children are a big fan of macaroni and cheese. Not only did they enjoy eating it but had fun chipping to prepare it. The little ones did the grating and prepping while my grown girls worked with me at the stove.

@einargk maybe for the bread crumbs you can leave the GF bread out for a day or two or maybe you can cook the bread longer than you usually do but don't let it go to long or it will burn and maybe try to grate the bread using a box grater on the larger holes or food processer good sources for GF breadcrumbs are however I have never tried them

Excellent fun dish! Even my picky son loved it. Panko is fab, almost as good as any Chef John recipe...almost, but not quite. I have yet to make one of your recipes and not absolutely enjoy them. Delish! ***** five stars CJ!

I have made this 4 times now. It is my absolute favorite mac & cheese recipe. Love, love it! I use a variety of cheeses and am a big fan of Panko bread crumbs.

I love trying new recipes for macaroni and cheese. This was absolutely delicious! Of course I made the whole pound of pasta...next time I want to try it using additional sauce...

I so wanted to make this as soon as I heard what bread crumbs he used! Japanese Panko bread crumbs are the kind we buy! I feel so culinarily intelligent right now. ;)

Had to lauh out lou when he came to the comment about how much salt to add. Now he really needs to change his recommendation regarding the Nutmeg in a similar manner. Now for a queston. Can anyone recommend a flour and breadcrumb ingredient that would fit within a Gluten-Free diet? A rice pasta might work - how about a gluten -free alll-purpose flour? I can't remember seeing a GF bread crumb mix, but we could use crusts left over from GF bread we consume. Way differet in density from regular breads though. Why bother? Anyone want to guess how much celiac's long for some of those 'everyday' foods/tastes from one's youth? ;-) We just achieved a GF hot dog that's passable...
