Had to lauh out lou when he came to the comment about how much salt to add. Now he really needs to change his recommendation regarding the Nutmeg in a similar manner. Now for a queston. Can anyone recommend a flour and breadcrumb ingredient that would fit within a Gluten-Free diet? A rice pasta might work - how about a gluten -free alll-purpose flour? I can't remember seeing a GF bread crumb mix, but we could use crusts left over from GF bread we consume. Way differet in density from regular breads though. Why bother? Anyone want to guess how much celiac's long for some of those 'everyday' foods/tastes from one's youth? ;-) We just achieved a GF hot dog that's passable...

I love Chef John's videos. He's such a hoot! He also gives great litte tid bits of info along with the recipes. Can't wait to try this recipe. =)

Dear Chef John, Would it be totally offensive or sacreligious to add bacon to this? I just think that would completely put it over the top for my 17yr old son who by the way worships you as his god and wants nothing more than to meet you and learn from you someday! I'm thinking if your still in SF next time we visit my family in Sacramento we'll have to see if we can find your restaraunt. Thanks, Jennipher Baggett
