Swiss and Thousand Island dressing, That's how it was made when I worked for Jacks Corned Beef of Lumbard st in Baltimore. Beef needs to be shaved for best eating if too thick tends to become chewy when eating. OH Yes Reuben's and the cloak and dagger with pastromi and coleslaw on rye both good!

I noticed that the video used caraway rye for the sandwich however there are very many kinds of rye bread that can be used. I prefer no seeds but a dark Russian rye!

Absolutely get the corned beef shredded at the deli, make your own thousand island dressing and serve with more dressing on the side. I've always used Swiss cheese, but will try it with Muenster based on the recommendations. This has been my favorite sandwich since I was really little. I make this at least once a month and serve with homemade onion rings. Yum!!!

Oy! For a proper Deli Reuben, you should use a good home-made Russian dressing (not French!) made with mayo, sour cream, chili sauce, minced parsley, minced onion, minced dill pickle, grated horseradish, lemon juice and Worcestershire sauce. Marinate the sauerkraut in mayonnaise for about a half hour then drain. Shave the corned beef thin (and across the grain), pile it high and make sure to use a good hearty dark rye bread. Swiss cheese is the only way to go! Serve with a really good pickle and potato salad or a good coleslaw this is a great video, but overly simplifies a traditional New York Deli feast of a sandwich... Ex-New Yorker!

I also believe a Reuben is Muenster cheese and Russian dressing. The best I ever had was in eateries in Brooklyn where they were served open faced and eaten with a knife and fork! I want one NOW!

I believe that the real Reuben sandwich is made with Russian dressing and Muenster cheese. I am sure this sandwich is good but it could be even better.
