Video: How to Make Chicken and Biscuits

It's like a cross between chicken pot pie and chicken and dumplings.

This chicken and biscuits recipe is like three dishes in one pot! In this video, you’ll learn how to make chicken and biscuits. You’ll start by simmering a whole chicken, reserving the broth. Then you’ll sauté chopped veggies before making a roux. The stock goes back into the pot gradually. The topper here is a layer of pre-made buttermilk biscuit dough. Baked in the oven, the biscuits come out lightly browned and crispy on top, like chicken pot pie, while on the bottom the texture is a bit like chicken and dumplings. This is a terrific one-pot meal. No problem with canned biscuits, at my age, and I am confident I am older than most of you (82), I try to save time and clean up. Also, I use a little Knorrs chicken bulluion.

Thank you Chef John, I was planning to make the dumplings like my grandmother from scratch with some parsley and had thrown out the "Bisquick" which had a recipe on the side. I know it's trendy to use packaged biscuit mix but hey, if you're going to go through all the trouble of using a Le Creuset stock pot to cook a whole 5 lb. chicken, getting the meat off the bone, cutting up the mire-poix, and making a roux, etc....Why not go the full monty with dumplings made from scratch? BTW, thanks for spelling out roux––that was pretty funny, I guess not to be confused with those Roos from down under––which I rued the day that I ever met one)

The fabulous B. Smith is a real cooking phenom, especially known for her soulful interpretation of delicious dishes. IF SHE RECOMMENDS PILLSBURY BUTTERMILK GRANDS, USE THEM. This lady knows what she's talking about. TOTALLY. The last time I saw Chef B. Smith she was wowing the hosts of The View. YUM:)
