The title may say 'Goulash'..but under the title and video he mentions and acknowledges THIS is a stew, several times! Wonderful recipe, I would only add more onion, bell peppers, etc to make a more hearty stew, Thanks Chef. I know what to have for dinner now:)

I love Chef John's videos. He has a great sense of humor. I've been looking for a good Hungarian Goulash recipe since a friend who used to make it died and I never got the recipe. I'm making this today. Hope it's what I was looking for. Thanks Chef John.

This looks delicious! I would add sautéed fresh mushrooms with the onions. The chef does call his dish "stew" also. This sounds like a good dish on a winter's day.

I'm a Chef John fan (try has halibut with bacon and beans!) and immediately tried this dish the day it debuted. It is both simple and awesome. I can't believe the flavors were so complex yet there wasn't a red wine or anything heavy to add besides a small amount of balsamic vinegar. After a practice first weekend run, this could be made subsequently during weeknights if the cook has 2 hours total - it's very easy and doesn't require constant attention. We didn't have the caraway seed or marjoram, but it was fabulous with Hungarian paprika, the cayenne and thyme. I added some Italian blend in a lame attempt to replace the caraway and marjoram. We dished over some whole wheat fusilli and it was incredible, but tomorrow we will make if with zucchini spaghettini for a healthy kick. I would consider adding carrots and celery next time for some veggies - it definitely wouldn't ruin the dish and would add some healthy veggies to this winter dish!

Chef John, at a Hungarian market I bought two tubes of Univer Goulash Cream (one hot and one mild) Paprika Mix. Have you ever used this product? I'm wondering if this paste would take the place of the spices in your recipe. Thank you.
