Mama2lx..The thing he lifted the wings with is called a "spider" and they are extremely useful. King Arthur has them and any other kitchen type store. The rack is just a rack you would cool cookies on, also found in a kitchen store or even Penny's.

The wings were a huge hit and were extremely easy to pick up and eat. I have never believed in par boiling but this definitely worked. The flavor cooked all the way through the chicken and while baking, you don't have to turn them over! I assume the oil spray on the pan is what provides that great crust. Will do it again the next time I make chicken wings!!

This fella's very humorous, and a good cook too! His parboil/bake technique produces tasty wings; I've been making them similarly for years. Frying is very tasty but a little over-rated. We wing fans need to recognize when a member has done good; this fella has a recipe that won't disappoint!

I know this is probably a stupid question, but I am having a brain malfunction. I want one of those draining rack/pan things Chef John uses but I cant remember what exactly they are called or what to look for. Can you tell me what its called and where to get one?

Not bad wings (for an in the oven wing), just remember folks, chef john is obviously not from buffalo... Dude, please stop telling the good chicken wing eating people of the world not to use bleu cheese!!! BC SHOULD be used with any style of CW. Rooties bleu cheese is what we use here in buffalo, it is the ultimate, if you cant get it, order it! Come to Buffalo John, we'll show you a few things about Wings! Wings in the oven, lol!!
